Apple Cabbage Slaw

The VA Healthy Teachings Kitchen presents a colorful and quick apple cabbage slaw packed full of fiber and antioxidants. For more information on Healthy Teaching Kitchens or more recipes, please visit:

1/2 cup plain nonfat Greek yogurt
1-3 teaspoons lemon juice or apple cider vinegar
¼ teaspoon salt
1/2-2 tsp honey, agave, or maple syrup
½ small cabbage head, shredded (about 2 cups)
1 medium carrot, grated (about ½ cup)
1 medium apple, cored and chopped (about 1 cup)
½ cup raisins or dried cranberries

1. Combine cabbage, carrot, raisins, and apple in large mixing bowl.
2. Combine yogurt, lemon juice, sweetener, and salt to a small bowl. Add to produce and toss again.
